Ultimate Power Ball!

“Yes, you’ll feel like you won the lottery!!!

  • 1 ½ cups of any cereal, like cheerios, chex etc..or you can substitute for about 3 cups of cooked rice

  • 1/2 cup diced dried fruit – anything that you like

  • 1/3 cup chocolate chips

  • 1/4 cup sesame seeds or sunflower seeds or pumpkin seeds

  • 1/3 cup of almond butter, peanut butter, cashew butter, or sunflower butter

  • 1/2 cup honey

  • 3/4 cup shredded coconut


1. In a large bowl, toss together the cereal or rice. Add the dried fruit, chocolate chips, and seeds.

 2. Stir in the nut or seed butter and the honey. Cover the bowl with plastic wrap and refrigerate for 30 minutes.

 3. Place the coconut in a small bowl. Using a tablespoon, scoop the mixture and form it into 1-inch balls with your hands. Roll the balls in the coconut and place in a container. You can store these in the refrigerator for up to 1 week, or in the freezer in a freezer bag or container a month. My suggestion is to divvy them up into baggies that you’ll use on your runs or bike rides or snacks for work ☺
