Greek Rice Bowl

Ingredients

  • 1/4 cup brown rice (uncooked)4 oz baked boneless chicken beast

  • (I seasoned with Mrs. Dash Everything seasoning)

  • 1/2 cup canned garbanzo beans, rinsed and drained.

  • 1/4 cup sliced radish\n1/4 cup sliced cucumber

  • 1/4 cup sliced red onion\n1 oz crumbed feta

  • 2 oz Ken’s Simply vinaigrette Greek dressing

  • Cook rice per package directions

    Directions

  • Place in bottom of large bowl. Arrange cucumber, garbanzo beans, chicken, red onion, radish and feta on top of rice. Drizzle Greek dressing over the top.(Garnish with fresh oregano and chopped parsley if you have it!) Enjoy! Approximately 620 calories.
